Cheese made from pasteurised cow’s, goat’s and sheep’s milk, matured in extra virgin olive oil, with a minimum maturation period of 12 months. It is cylindrical in shape and has an aged yellow appearance, caused by the long maturation period in olive oil. It is a high quality cheese as it contains around 50% goat and sheep milk, of high nutritional value.
It has an intense, slightly spicy flavour, with the lactic and fruity aroma of virgin olive oil giving it an aged appearance with a firm and compact consistency.
