Zamorano Shepherd’s cheese 100% pure sheep, made with rennet of suckling lamb. Completely Castilian cheese, made with raw sheep’s milk from the Churra breed.
It is a cheese that is usually served with wines from the area, such as those that belong to the D.O. Toro or Ribera de Duero. It is usually cut into triangular slices of about 3 to 5 mm thick and spread out on a plate, sometimes alongside quince paste.
